Fresh Apple Cake

This simple, spiced fresh apple cake is one of my favorite autumn bakes. Loaded with diced apples and warm cinnamon, it fills the whole house with the coziest aroma while it bakes. It’s perfect served warm on the porch with a dusting of powdered sugar or a scoop of vanilla ice cream.

Ingredients
  

  • 1 cup oil
  • 1 tsp vanilla
  • 2 eggs
  • pinch salt
  • 2 cups AP flour
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 3 cups apples, diced
  • 1/4 cup powdered sugar

Equipment

  • 1 9×13 baking dish

Method
 

  1. Beat together oil, vanilla, eggs, and sugar.
  2. Sift dry ingredients together.
  3. Mix dry ingredients into sugar mixture.
  4. Fold in apples.
  5. Bake in greased 9×13 dish at 325 degrees F for 50-60 mins.
  6. Sprinkle with powdered sugar.
